Soooo, in case you couldn't tell from all my recipe posts, I've been on a SERIOUS cooking kick lately. We've always been a family that cooks dinner at home a lot, but...gasp!...I'm starting to actually enjoy cooking. I'm sure it will be a phase that quickly passes though.
Our latest craze is asparagus...oh.my.goodness....it is sooooo delicious. And it is currently in season so head to your local farmer's market and get some! Even if you don't usually like asparagus, TRY THIS...you won't be disappointed!!
Here is a yummy way to marinate it and cook it -
Ingredients:
2 TB balsamic vinegar
2 tsp. minced garlic (the wet kind in a jar, not the dry flakes)
about 2 tsp. pepper
about 2 tsp. sea salt
2 TB olive oil
about 1 lb. asparagus, cut off the tough, woody ends about an inch or so
The measurements are just an estimate so play around with it to get it the way you want it.
Directions:
Put all ingredients in a gallon size baggie and shake so that the asparagus is covered in marinade. Let sit in baggie for at least 2 hours, then put them on the grill (medium heat for about 5-10 minutes) depending on how you like them. We like ours to get a little crispy. You can also put them in the oven.
